All-Wise Meadery

offers a modern introduction to one of the world’s oldest fermented beverages through dry, expressive meads made with carefully sourced honey. The idea began when founder Dylan Sprouse developed an interest in mead while living in California. After moving to New York for college, he continued experimenting with recipes and became drawn to naturally made styles that differed from the heavily sweetened options commonly available.

In 2017, Sprouse partnered with longtime friend Matt Kwan to develop the All-Wise label. They worked with New York apiaries to source quality honey and refine a flagship recipe before officially launching the brand in summer 2018. Their goal was to challenge assumptions about mead by creating a lighter, cleaner, and more approachable expression of the beverage.

The production philosophy combines ancient techniques with modern technology and minimal intervention. Honey, water, and yeast form the foundation, while careful fermentation creates dry meads with evolving flavors that continue developing in the bottle. By supporting small growers and local producers, All-Wise Meadery highlights the character of its ingredients while offering curious drinkers a distinctive alternative to traditional wine, beer, and sweeter commercial meads.
