Hilmy Wines

is a small-lot winery dedicated to producing carefully crafted wines with patience, precision, and respect for the fruit. Located along the Texas Hill Country wine route, the winery works primarily with Texas-grown grapes while also producing limited releases from select out-of-state fruit under the Erik Hilmy label. This flexible approach allows the winemaking team to explore different varieties, regions, and expressions.

Every bin, tank, vat, barrel, and cask receives close attention throughout the production process. Rather than rushing wines to market, the winery allows each selection time to develop its structure, aroma, and character. Some wines are released young, while others remain in barrel or bottle for extended aging before becoming available to guests.

Visitors can discover wines made with a thoughtful, hands-on philosophy in a relaxed tasting environment. The portfolio continues to evolve as the winery experiments with later releases and longer maturation periods. Both casual drinkers and experienced enthusiasts can appreciate the transformation that occurs as each wine develops. With small-batch production, Texas-grown fruit, and a commitment to careful winemaking, Hilmy Wines offers a distinctive stop for travelers exploring the Fredericksburg wine region.
