Separatist Beer Project

was an independent craft brewery based in Easton, Pennsylvania, created by husband-and-wife team Joe and Laura Fay. The brewery began in 2015 under the name Søle Artisan Ales before evolving into Separatist Beer Project in 2018. The rebranding reflected a broader brewing philosophy that moved beyond traditional ales toward mixed fermentation, wild beers, and more experimental brewing.

Separatist Beer Project became known for an adventurous and diverse beer portfolio that included hazy and imperial IPAs, lagers, saisons, stouts, sour ales, and wild ales. Beers such as Citra Nerd, Chasing Meadows, Cellar Fuzz, Classic Cream, and Apparent Drift demonstrated the brewery's willingness to explore different fermentation techniques, ingredients, and flavor profiles. Its barrel-aged and spontaneously fermented beers were particularly distinctive.

The brewery also operated Separatist Bar + Bottle at 101 Northampton Street in downtown Easton. The Scandinavian-inspired beer café and bottle shop featured rotating taps, takeout beer, growler and crowler fills, and an extensive selection of the brewery's own releases. The location offered visitors a different style of taproom experience centered on specialty beer and a carefully curated atmosphere.

Although Separatist Beer Project is no longer operating, it remains part of Pennsylvania's recent craft brewing history. The brewery closed its Easton and Philadelphia locations in 2023 after nearly a decade in business. Its emphasis on mixed fermentation, barrel aging, wild ales, and experimental brewing helped establish a distinctive identity within the state's independent craft beer community.
